Basmati/sushi rice (1 portion)
Cooking oil (1 TBSP)
Vegan Kimchi (100g)
Cheddar/Mozzarella Cheese (50g)
Sweet Corn (30g)
Spring Onion (15g)
Soy Sauce (1 TBSP)
Brown Sugar (1 tsp)

While boiling rice, roughly chop the spring onion and set aside.
Heat cooking oil in a pan and fry kimchi for 2 min.
Add brown sugar and soy sauce, and cook until evaporated (becomes thicker).
Add the boiled rice and sweet corn, and mix well.
Turn off heat and serve in a bowl.
Sprinkle with cheese and chopped spring onion to serve.
Mix evenly and eat.
